Watch Entertaining With Beth's Video-    https://m.youtube.com/watch?v=u1qE1nxBSAI

It was a pretty normal day in my hot hot Delhi as I sat reclined on my sofa, reading from my copy of The Inscrutable Indians, when a TV commercial reminded me that Sunday is Mothers Day

After spending all afternoon thinking of a special gift. I decided to do this- Make cookies. Then my brain reminded me how I had earlier had a failure of my cookies becoming biscuits.
I sought to the wondrous internet for a solution and came upon Beth's Foolproof Chocolate Chip Cookies.
And Beth saved my life!
Her recipe, as she states IS foolproof.
I wanted to share it with you and save your Sundays as well, so here goes!

The Cookies
(Makes about 10 to 15 depending upon the size)

- Preheat your oven to about 177 degrees Celsius (350 Fahrenheit)

-In your mixer on high, add 1 cup mix unsalted softened(must!) butter with 1cup caster sugar and mix well.
-Add two eggs and 2tsp vanilla essence to this mix
-In a bowl mix 1 and 3/4 cup floor, 1tsp baking powder and 1tsp salt and mix with a spoon.
-Mix the floor into the rest little by little, either by using the mixer or a wooden spoon.
-Using a spoon/ice cream scoop put the batter on a oven tray lined with butter paper.
-Sprinkle Chocolate chips (I used broken up pieces of a chocolate bar, since i couldn't find chocolate chips)generously over it (you can mix them in with the batter for an over all chocolate taste)
-Bake in oven for exactly 13 mins then take out and let it settle for 5 mins.
- Time To Eat!!

That's it ??!?!?!!! IKR! This recipe can be in used for birthdays and anniversaries, too.
Comment your experiences with the recipes and send in pictures, I would love to read and see.
Remember if I can, you can!

Food Fact File #1

Fortune cookies are NOT Chinese. They are originally from San Francisco.
They were first made in the 1900's. It is made from floor, sugar and sesame seed oil. The recipe is base on a classic Japanese cracker. It is served across the world, now, in Chinese restaurants but is absent from China.

Bonus Facts-

Scientists can convert peanut butter into diamonds!
( I know what I am giving my mom for mothers day tomorrow!)

Dynamite is made from peanuts
(Never mind.)

Everything about Italy fascinates me. It's people, its food , its language......the accent. It's all so wondrous.
When it comes to Italian cooking the first thing we think of is wine, then pizza, and then pasta. But there is just so much more to Italian cooking that a lot of people don't know. There a hundreds of different kinds of breads and cheeses, that it'll take years before we fully master Italian food.
But for now we have a dinner to make.

After I came back from school, tired of my dance practice, I decided to cancel my basketball practice to relax for the rest of the day.I switched on the TV and came upon 'Julie And Julia' being aired on the Romedy channel. That movie is what gave me the idea to start the Italian rendezvous

The Nights Menu-::
-Bruschetta
-Vegetables Sauteed In Butter
-Milano Chicken
-And some more bread.....

Let's Begin!

Bruschetta
-Chop up yellow and red bell peppers and tomatoes in big chunks.
-Put it all in a bowl and add 12 scrunched up basil leaves. Add olive oil(1 big tablespoon) balsamic vinegar(2 tablespoons) salt, pepper and oregano.
- Use your clean hands to mix.
-Slice up your bread and put a thin layer of butter on both sides. Grill it in your oven for 5 mins with the temp. 200 degrees celcius. (DO NOT put the tomatoes in the oven over the bread, they'll get dry )
- After your bread has browned, put the tomato mix on the bread and serve hot.

Sauteed Vegetables
-Add butter to a fresh pan and put in the vegetables. Make sure the vegetables are cooked but not soggy
-Season it with salt, pepper , basil, and oregano(to taste)
[It actually is that easy!]

Milano Chicken
[recipe taken from food.com, serves 4(changes have been made to the original recipe)]
- Start by putting butter in the pan and tossing in minced garlic cloves (about 9 to 10 cloves)
After 30 seconds add about 10 chopped up spring onions and let them brown.
- Add 5 finely chopped tomatoes and then immediately add 1 cup of water.
- Let it boil, till the tomatoes are soft and mushed. Then go ahead and add 200ml of fresh cream. Let the sauce thicken and add salt, pepper and paparika/chilli flakes, according to your taste.
- Take your washed up chicken breast pieces (1kg) and grease them with butter. Sprinkle on salt and pepper to your taste.
-Cook the chicken on a pan, until it browns a bit and the inside doesn't seem pink.
-Lay your sauce on the plate and put, over it, the chicken.

More Bread!!
Toast some more bread and enjoy with chicken.

After a long day for all, my family and I enjoyed the delicious dinner that I cooked all by myself.
It was a great success and me being the grown-up I am, drank Coke in a white wine glass. Yup! And trust me there is nothing better.
So please, go ahead and try these recipes. Because if I can do it, SO CAN YOU!
Leave comments about your Italian experiences below and I'll see you soon!!
